S’mores Cookies- All the Feels of Summer, in a cookie.

I love a good s’mores. We get a little competitive and creative in my family about them. We use all sorts of candy, like a Reeses’s instead of a Hershey’s bar. We also go back and forth on burnt or golden brown marshmallows.

These cookies are the perfect substitute, for an actual s’more. Plus they keep in the kitchen for up to a week. Not that they will last that long. What are some of your favorites that you wish you could make and have on hand?

S'Mores Cookies

All the feels of s'mores in a lot less messy, cookie.

Ingredients

  • 1/2 cup Unsalted Butter, at room temperature
  • 3/4 cup Golden Brown Sugar
  • 1/4 cup White Granulated Sugar
  • 1 large Egg
  • 1 tsp. Pure Vanilla Extract
  • 1/2 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 3/4 cups All-Purpose Flour
  • 1 cup Graham Cracker cereal Finely ground
  • 2 cups Mini Marshmallows cut in half
  • 1 cup milk chocolate chips unwrapped.

Instructions

  • Preheat oven to 350°
    Line a baking sheet with parchment paper.
    Cream together butter and both sugars.
    Add egg and vanilla and blend until combined.
  • In a separate bowl, whisk together all the dry ingredients.
    Blend dry mixture into butter mixture, until a workable dough forms. Do not over work.
    Add in cereal, marshmallows and chocolate chips.
  • Scoop 1-inch balls onto baking sheet.
    Bake cookies for 10-12 minutes, until top is ust golden brown.
    let cool for at least 5 minutes then serve.
