Applesauce Cinnamon Chip Snacking Cake

Who doesn’t love a classic? Well, I love a classic and this one is special because it is a recipe I started making when my 25 year old daughter was in first grade. It has really stood the test of time.

This cake is simple to prepare and has become a staple at every school function and bake sale. I always keep the ingredients in the house. It comes together so quickly, you can actually bake it when your guest arrive and it will be ready for dessert.

Applesauce Cinnamon Chip Cake

I found this recipe, years ago, on the back of a bag of cinnamon chips. Now I can't even find cinnamon chips in the store. It is the perfect snacking cake. You can always order the cinnamon chips from amazon.

Ingredients

  • 1 cup Unsalted Butter, at room temperature softened
  • 1 cup Granulated White Sugar
  • 2 Lg Eggs, at room temperature
  • 1/2 teaspoon Vanilla Extract
  • 3/4 cup Applesauce
  • 2 1/2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 1 2/3 cups Cinnamon Chips
  • Confectioners' Sugar for sprinkling

Instructions

  • Heat oven to 350°
    Lightly grease a 9x9x2-inch baking pan.
  • In the bowl of a stand-up mixer, fitted with paddle, beat butter and sugar, until light and fluffy.
    Add in eggs, one at a time then vanilla..
    Finally add in applesauce
  • In a separate bowl whisk together flour, baking soda and salt. Gradually add to butter mixture, until combined. Do not overtax.
  • Stir in cinnamon chips.
  • Spread into prepared pan.
  • Bake for 30 to 35 minutes or until wooden pick inserted in center comes out with just a few moist crumbs.
  • Cool completely in pan on wire rack.
  • Cut into squares and sprinkle with powdered sugar for serving.
