Yummy Yogurt Bars

I’m a little behind in getting this recipe posted but it is a good one. I made mine with semi sweet and bitter sweet chocolate. I honestly think it could be a little sweeter so mix up your chocolates. Milk Chocolate would be good as the magic shell.

Chocolate Chip Yogurt Bars

Inspired by a recipe from @RachelMansfield, but I tweaked it a little.

Equipment

  • 8 Popsicle sticks or other "handle"

Ingredients

Bars

  • 1/2 Cup Creamy Peanut Butter. I microwave it for a few seconds to loosen up.
  • 1 Cup Plain Greek Yogurt. I use Whole Fat.
  • 2 Tbs. Honey
  • 2 Tbs Semi-Sweet Chocolate Chips
  • 1/2 tsp. Kosher Salt

Magic Shell

  • 1 Cup Chopped Chocolate. I like Milk Chocolate
  • 2 Tbs. Sprinkles, or other topping

Instructions

Bars

  • Mix together Peanut Butter, Yogurt, Honey, Chocolate Chips and salt, until well blended.
    You can melt the chocolate chips and swirl it in or leave chips whole.
  • Using an ice cream scoop, Make even size balls and place on a baking sheet, lined with parchment paper.
    Press balls down into cookie shape and press Popsicle stick half way through.
    Place another piece of parchment paper over and place in freezer for at least an hour until fully frozen.

Magic Shell

  • When the bars are almost frozen make your magic shell.
    Melt the chocolate and stir n the coconut oil until combined.
  • When the bars are ready, set up a state of magic shell and sprinkles in two shallow dishes.
    Dip each bar into chocolate and then immediately in to sprinkles.
    Place back on parchment paper and let set.
    Keep frozen or refrigerated until ready to serve.
