Peach Sage Shrub

This is an excellent Summer drink. You can use up fruit with this recipe. It can be served with or without alcohol. Try different fruit/herb combinations.

Equipment

  • 1 Mason Jar

Ingredients

  • 2 Tbs. Chopped Fresh Sage
  • 1 Cup Granulated White Sugar
  • 1 Cup Fresh Peaches, Cut into 1/2" chunks
  • 1 Cup White Balsamic Vinegar

Instructions

  • Using the back of a heavy spoon, or a potato masher, muddle the herbs, fruit and sugar together, in a large mason jar.
    Add in the vinegar and stir gently.
    Place in refrigerator for at least 2 days. Give it a shake whenever you open your fridge.
  • When ready to serve, strain the fruit/herbs out (SAVE THEM!).
    Pour one ounce of the shru, over ice, in to glass and top with seltzer or club soda. You can add a shot of whatever alcohol you'd like.
    Garnish with more Sage and serve cold.
  • The fruit is really good served over ice cream or mixed in to a fresh salsa.
