This is an excellent Summer drink. You can use up fruit with this recipe. It can be served with or without alcohol. Try different fruit/herb combinations.

Ingredients
2Tbs.Chopped Fresh Sage
1CupGranulated White Sugar
1CupFresh Peaches, Cut into 1/2" chunks
1CupWhite Balsamic Vinegar
Instructions
Using the back of a heavy spoon, or a potato masher, muddle the herbs, fruit and sugar together, in a large mason jar.Add in the vinegar and stir gently.Place in refrigerator for at least 2 days. Give it a shake whenever you open your fridge.
When ready to serve, strain the fruit/herbs out (SAVE THEM!).Pour one ounce of the shru, over ice, in to glass and top with seltzer or club soda. You can add a shot of whatever alcohol you'd like.Garnish with more Sage and serve cold.
The fruit is really good served over ice cream or mixed in to a fresh salsa.
