Preacher Cookies- For when it’s too hot to bake

It has been so dang hot! That doesn’t mean I want to buy cookies or not have sweet treats on my counter. So I turn to no bake recipes.  These were so good I barely had enough left for the photo.

No-bake recipes have been really popular in the last few years. Most of the the protein treats you read about our no-bake. What I love about this recipe is that you can add or delete ingredients to make it custom. I was low on oats so upped the rice cereal and they were great. They are really sweet so maybe adding some dried cherries to add a little tartness, would be good.

Preacher Cookies

LOL, the reason there are so few cookies they were gone before I go back to take the picture.

Cuisine: American, Southern

Ingredients

  • 1 Cup Granulated White Sugar
  • 1/2 Cup Unsalted Butter, cut in pieces
  • 1/4 Cup Cocoa Powder
  • 1/4 tsp. Kosher Salt
  • 14 oz Can Sweetened Condensed Milk
  • 1-1/2 Cups Rice Cereal, like rice krispies
  • 1 Cup Quick Cooking Oats
  • 1/2 Cup Crunchy Peanut Butter
  • 1 tsp. Vanilla Extract
  • Maldon Flake Salt for finishing

Instructions

  • In a saucepan, over a medium heat, whisk together sugar, butter, cocoa powder, salt and condensed milk.
    Bring to a boil and then reduce heat and stir to make sure it is well combined.
  • Remove from heat and add vanilla & peanut butter.
    Add in rice cereal and oats. Fold to incorporate well.
    Use a small scooper to portion out cookies on two parchment lined baking sheets.
    Use the back of the scooper to flatten out the cookies just a bit.
    Let sit at room temperature until set up. You can also chill them in fridge.
