Peanut Butter Pie

If you are looking for a rich, decadent pie, that you can make quickly. Like last minute guests quickly; look no further. I always have peanut butter on hand and the rest o the ingredients are easy to work into regular rotation. That way you will always have the ingredients to make this pie. It comes together quickly and chills in less than 2 hours. Make it when they call to say they’re on their way, and it will be ready just in time for dessert.

Peanut Butter Pie

I love everything peanut butter! I literally eat it on anything and even a "peanut butter sucker", which is really just peanut butter on a spoon.

Ingredients

Crust

  • 25 each Chocolate Sandwich Cookies
  • 1/4 cup Melted Unsalted Butter

Filling

  • 1 cup Creamy Peanut Butter
  • 8 ounces Cream Cheese, at room temperature
  • 1-1/4 cups Confectioners Sugar
  • 8 ounces Fresh Whipped Cream

Instructions

Crust

  • In a food processor, add the cookies and pulse until a fine crumb.
    With processor on low, drizzle in melted butter, until combined.
    Press this mixture into a 10" pie dish and set in refrigerator to chill, for at least an hour.

Filling

  • I use the same bowl of the food processor and blend together the peanut butter and cream cheese, until smooth.
    Add in confectioners sugar and blend until smooth, then add whipped cream, scraping down sides.
  • Spoon the filling into the crust and smooth the top.
    Chill for at least an hour before serving.
    This is a rich pie. You can add whipped cream to the top, but you do not need it. I like to decorate the top with a cookie or two standing up.
