Garlic Noodles!

There are a few recipes that I think should be standards. Those that we would eat in the middle of the night after a fun night out, are among them. To that end I surrender to Newt Nguyen’s Garlic Noodles.

This recipe comes together so quickly and uses ingredients you can easily keep on hand in your pantry and fridge. I love how comforting the blend of garlic, sugar and heat are. Plus, these noodles are not so filling that you can’t eat them at the end of the night. They are way better than a pizza.

Garlic Noodles by Newt Nguyen

I feel like this is the one recipe we should all know how to make. It's comforting and easy.

Ingredients

  • 8 oz. Spaghetti
  • 2 Tbs. Granulated White Sugar
  • 2 Tbs. Oyster Sauce
  • 1 Tbs. Maggi Liquid usually on the same aisle as soy sauce or fish sauce. Ask.
  • 2 tsp. Fish Sauce
  • 3 Tbs. Unsalted Butter
  • 1 stalk Scallion, slice it fine and separate the green and white parts.
  • 10 cloves Garlic, minced
  • 1/2 tsp. Sesame Oil, a little goes a long way
  • 3 Tbs. Fresh grated Parmesan

Instructions

  • Cook the spaghetti in a large pot of slated water, according to package directions.
    While th spaghetti is cooking, whisk together the sugar, oyster sauce, Maggi and fish sauce. Set aside.
  • Melt the butter in a medium skillet over a medium heat. Add the white part of the scallion and the garlic. Turn the heat down a little. Sauté for about a minute until really fragrant.
    When the spaghetti is ready, use tongs and add directly to the sauce pan and toss until noodles are well coated.
  • Divide noodles into two bowls and drizzle with sesame oil and green part of scallion.
    Grate fresh part over each bowl and serve while hot.
