In the summer time there is nothing better than fresh ice cream. Especially, right now when we are breaking records for heat.
There are many recipes for ice cream but I wanted one that was no cook. So this was the best option. Because it is a good basic, this recipe lends itself to variations. Â I used peaches but really any fresh produce will work. I would recommend that you stick to soft fruits.
As winter gets closer, you can skip the fruit and add little more vanilla, for a traditional vanilla ice cream. You can also add crushed peppermint candy and a drop of peppermint oil for a fun holiday flavor.

Fresh Peach Ice Cream
This fresh peach ice cream is so easy and no cooking required.

- 2-1/2 lbs. Fresh Peaches, peeled and chopped
- 2 Cups Half & Half
- 1-14 oz Can Sweetened Condensed Milk
- 1-14 oz Can Evaporated Milk
- 1-1/2 tsp. Vanilla
- Whole Milk, as needed
Using either a food processor or blender, puree the chopped peaches. Reserve some for adding into the ice cream. I work in batches.
Add ice cream mix to your ice cream maker. Again you may have to work in batches. If you have a large ice cream maker, you may need to add whole milk to fill the vessel.
Follow the instructions from your ice cream maker. The ice cream will come to a soft serve consistency. Once it is to this point, turn into the container you will store it in.Place in freezer. It should be ready to go in 2 hours.Once it has frozen over night it will be hard. make sure you give yourself a few minutes to let the ice cream soften slightly before serving.
