Strawberry Icebox Cake

Even though this won looks a little wonky, this is the perfect no-bake "cake"

Ingredients

  • 3 Cups Heavy Whipping Cream
  • 1 Tbs. Confectioners sugar
  • 6 oz. Strawberry Preserves
  • 1 tsp. Vanilla
  • 2-9oz plays. Oreo Thins Cookies, you can use any flavor. I like the mint.
  • 1 pint Fresh Strawberries, cleaned and halved

Instructions

  • In the bowl of a stand up mixer fitted with the whisk attachment, beat the heavy cream with the vanilla and confectioners sugar, until stiff peaks
    Fold in strawberry preserves.
  • Assemble: Place a doily or circle of parchment paper on a serving plate.
    Spread thin layer of the whipped cream in a circle on the plate. Leave a 2" border.
    Add 6 cookies in a circle patter, with edges touching. Add one or two in the center.
    Add another layer of whipped cream and then repeat with cookies. Repeat this process until no cookies are left.
    Note: You want to work fast and in a cool room. If your cake starts to "melt" put it int he refrigerator or freezer to reset.
    Your last layer should be a cookie layer. Then dollop with a little bit of the whipped cream.
    Let set up in refrigerator, uncovered, for 5 hours or overnight.
  • When you are ready to serve, decorate with halved strawberries. Display quickly and then serve from the kitchen.
