A Recipe for Plain or Chocolate Sugar Cookies

I think it's essential to have a basic recipe that you can convert. So let's start with a sugar cookie and then make it chocolate.

Ingredients

  • 2 cups All-purpose Flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. Kosher Salt
  • 1 cup Unsalted Butter, at room temperature
  • 1-1/2 cup Granulated White Sugar
  • 1 Lg. Egg
  • 1 Egg Yolk
  • 1 Tbs. Vanilla Extract

To Make Chocolate

  • 1/3 cup Cocoa Powder
  • 1/2 cup Unsalted Butter, at room temperature
  • 1 Lg. Egg
  • 2 Tbs. Whole Milk

Instructions

  • Preheat oven to 350°
    Whisk together flour, baking soda and salt. Set aside.
    In the bowl of a stand up mixer, fitted with paddle attachment, beat the butter and sugar until light and fluffy. This is important for the texture of the cookies.
  • While mixer is on, add egg and vanilla.
    Gradually add in flour mixture. Do not over mix. You can fold I remaining flour bits with spatula.
  • use a scoop to form balls of dough and put on parchment lined baking sheet about 2" apart.
    Bake for about 15 minutes, rotating halfway through the time. Edges should look crispy and centers creamy but not wet.
    Let cool on pan fro 10 minutes then cool completely on wire rack.

For Chocolate cookies

  • Sift the cocoa powder into flour mixture and give a little whisk.
    Add additional wet ingredient during mixing process, after sugar but before egg and vanilla.
    Bake as directed above.
