Instructions
Heat oil in a large sauce pan. Add mushrooms and let cook for 3-4 minutes until liquid start to release from mushrooms.Add chicken (or other ground meat) and break up to mix in with mushrooms.Cook until lightly browned. Season with a generous pinch of kosher salt and fresh ground pepper.
Stir in green onions and garlic, then ginger. At this point you will have substantial liquid. I remove about 2 tablespoons of hot liquid and mix with 1 tsp. cornstarch. Stir until smooth then add back into meat mixture.I add the water chestnuts last. Then I make sure everything is well incorporated.
Serve with open lettuce leaves, extra soy sauce, sriracha and a tsp. of mama tears on each wrap.
