Frozen Yogurt Oatmeal Bars

I like to make these, freeze, cut and then wrap individually. I store the in th freezer for a quick grab and go. This recipe was inspired by Rachel Mansfield.

Ingredients

  • 1 cup medjool dates pits removed
  • 2 cups rolled oats
  • 1 cup creamy nut or seed butter I used pecan butter from Sprouts.
  • ¼ cup ground flax seeds
  • 1 tsp. cinnamon optional
  • 2 Tbs. Chia seeds
  • 1-1/2 cups plain Greek yogurt
  • 1 cup frozen berries no sugar added, I used a mixed berry blend
  • 2 Tbs. Honey

Instructions

  • In a food processor, or a vitamix type blender, blend the dates until it is sort of a paste. Add in the oats, nut butter, flaxseed, cinnamon and 1 tbs. of chia seeds and cinnamon if using. Blend until well blended and it holds together.
  • Transfer the mix to an 8x8 pan, lined with parchment paper or foil. Press firmly until you have an even “crust”. Stir honey into yogurt and then spread across the “crust”, evenly.
  • Microwave the berries 1 minute, give it a good stir. Then stir in remaining tbs. of chia seeds and for microwave for another minute. Let your “jam” sit for a minute then spread over top of yogurt.
  • Freeze for a couple of hours until solid enough to cut. Then cut into squares. From here you can serve them, or I wrap them individually and freeze them for a quick grab and go breakfast or snack.
  • I’m not a huge fan of chia seeds so I just omit hem from the jam, but it does help to thicken the berries.
